Thanks for sharing your Cessna 172 project, I am about to begin my own similar project. I am nearly ready for beginning the build, but ned some help regarding the yoke placement.
My panel will be almost like the one build on this site, i will use a 22" monitor for the flight instruments and a frontplate with 3D printed bezels.
I also have an Saitek Cessna Yoke, but if i place it behind the font plate like yours, I can't make room for the switch panel, because of the yoke placement close to the frontplate. Did you extend the Cessna Yoke ? Could you take some photos from the backside og the panel end the yoke mount?
